Everyone who has eaten cashew nuts will agree with me that it is one of the tastiest nuts. But did you know that the best way to eat them is when they are roasted right there in front of you, over an open fire? It’s not something that one can experience, unless you can get some whole dried nuts and get going.
Visit any village home in the cashew growing areas of Goa, watch the nuts roasted before you and you will agree with me that it is another great culinary experience.
And though that sounds relatively simple, roasting nuts isn’t all that easy. First the nuts are placed in hot embers, and if the heat is just right, it takes just a few minutes for the nuts to be roasted. The nuts are ready when you can hear them sizzle, and if you are not careful, they could burn rather quickly.
Opening them is a tricky task, because of the oil released from the shell. But those in the know can break open the nut with a quick stroke of a piece of wood. Don’t bother storing them – they taste best when eaten there and then.
